Pressure Cooker Beef Stew

 My family has enjoyed this very basic beef stew recipe for years.

 2 tablespoons vegetable oil                                                 2 cubes beef bouillon

 1 small onion, diced                                                             2 cups water

 2 pounds cubed beef stew meat                                         2 teaspoons cornstarch

 5 carrots, peeled and diced                                                 2 teaspoons salt, or to taste

 8 medium baking potatoes, peeled and cubed                   1 teaspoon black pepper,     or    to     taste     

  • Heat the oil in the bottom of the pressure cooker over medium-high heat. If your cooker has an insert, remove it and cook directly in the bottom of the pot. Add the onion and beef, and cook until browned on the outside.
  • Stir in the water, bouillon cubes and carrots, close the lid, and secure the pressure regulator. Heat until you start to hear sizzling, then reduce the heat to medium, and set your timer for 10 minutes. If you have an adjustable pressure regulator, set it for 10 pounds of pressure.
  • Meanwhile, peel and cube the potatoes.
  • When the 10 minutes are up, release the pressure from the pot according to the manufacturer’s instructions – mine needs to sit under cold running water for 5 minutes until the lid can be released. Remove the lid and place cubed potatoes in the pot.
  • Replace the lid and regulator and heat on medium-high until pressure is reached. Cook for 10 minutes and remove from heat. Release the pressure as before.
  • Remove the lid, and place the pot over medium heat. Bring to a boil. Stir the cornstarch into a small amount of cold water to make a slurry. Stir this into the stew, and cook for a few minutes.

Country Kitchen Tool Set

Pressure Cooker Dried Beans

Pressure cooker dried beans requires two important steps; soaking and cooking. The beans will absorb water during soaking, which makes them start to dissolve the gaseous starches that can cause bloating and discomfort. Cooking the beans tenderizes them and makes them more digestible. Always rinse the beans after soaking, as this helps to reduce gas-producing starches.

Use one pound of your favorite dried beans. (Note: lentils, split peas and black-eyed peas do not need to be soaked.) Pick through the beans, discarding any discolored or shriveled beans or any foreign matter. Rinse the beans well. In a 5 quart pressure cooker, cover the rinsed beans with 10 cups water. Cover tightly and refrigerate 6-8 hours or overnight (When the weather is not really hot, I let them soak on the counter overnight.). Drain and rinse the beans and the cooker. Place beans back in pressure cooker with 5 cups water and cook according to your manufacturers directions. (Mine calls for 10 minutes at 10 PSI for pintos and black-eyed peas; 25-30 minutes for great northern and lima beans.) Add salt when beans have finished cooking to prevent tough beans. Other seasonings may be added before cooking. Enjoy!
